Maitake Origin & Appearance The maitake mushroom (grifola frondosa) is a polypore fungus that grows at the base of trees in the wild. It appears in a cluster of multiple grayish brown caps which are curled and wavy, resulting in nicknames such as “hen-of-the-woods” and “ram’s head”.
